ASIAN VEGETARIAN STIR FRY WITH ORGANIC OYSTER MUSHROOMS

If your looking for an authentic tasting Asian Stir Fry that you can make in less than 30 minutes this may be your next go to recipe for just that.  This is a perfect weeknight meal that is quick to make,  flavorful, delicious and healthy.  This recipe is packed with vegetables leaving half your plate packed with fiber and nutrients. The tender and velvety black oyster mushrooms along with the aromatic notes left behind from the delicate star anise will leave a lasting impression on your palate. If your are following a restricted gluten free diet be sure to purchase a gluten free hoisin and chili garlic sauce as some brands contain wheat flour.

INGREDIENTS

1 large yellow onion sliced

1 large carrot sliced diagonally cut

6 oz fresh snow peas

3 large celery ribs sliced diagonally 

1 small red bell pepper julienned 

228 grams of whole black oyster mushrooms (stems cut) 

1 lb of broccoli 

1/4 cup of vegetable oil

2 whole cloves of  star anise

2 tablespoons of chili garlic sauce

1/2 tablespoon of pure sesame oil

2 tablespoons of soy sauce

2 teaspoons of lightly dried ginger

1 tablespoon of hoisin sauce

1 teaspoon of rice vinegar

Sesame seeds to garnish

DIRECTIONS

Sauce - In a small sized bowl whish together chili garlic sauce, sesame oil, soy sauce, ginger, hoisin and rice vinegar and set aside.                                                                                                                  

In a large size wok or frying pan heat up your vegetable oil on medium high heat and add your onions and star anise and fry for 1 minute.  

Add all of your vegetables and sauce to the wok and cover with lid stiring occasionally and cook for approximately 6 minutes or 

until the vegetables are cooked to your liking.  Remove from heat and serve with steamed rice or noodles.  Reserve any extra sauce the vegetables produced and drizzle the rice with some juice just before serving for some extra flavor.

Garnish with sesame seeds and enjoy.
