KETO ESPRESSO COCONUT CHIA PUDDING

Following a Keto diet plan may be challenging for some but if you can find a variety of recipes that taste good and keep you full and satisfied for hours sticking to your diet will become easier and the results will motivate you even further.  This Chia pudding recipe has a very good percentage of healthy fat which is what you will require on a Keto diet and furthermore loaded with fiber and an energizing kick! You can enjoy this as a snack or dessert. Serve with fresh berries, sugar free whipped cream and some extra nuts if you wish.  This can also be stored in the fridge for up to 2 to 3 days in an airtight container.  Enjoy!

INGREDIENTS


1/4 cup of black chia seeds
1 1/2 teaspoons of roasted ground espresso
1 teaspoon stevia
3 tablespoons unsweetened finely shredded coconut
3 tablespoons almond hazelnut butter
400 mls unsweetened coconut milk





DIRECTIONS

In a medium size bowl whisk together all of your dry ingredients.  
Gently and throughouly stir in your almond hazelnut butter and coconut milk.  
Cover and refrigerate overnight or for a minimum of 6 hours.
